以干燥蝶豆花为原料,以乙醇为提取剂,在pH1.0和pH4.5的条件下,通过超声波辅助提取法优化花青素的提取工艺。结果显示超声波辅助提取法的最优参数组合为:固液比例1:30(g/mL),提取温度50℃,超声处理时间20min,乙醇体积分数60%,其最大提取量可达到7.54(mg/g)。花青素的稳定性受pH、温度、光照的影响,在强酸性环境(pH≤3)下稳定性较高,反应1h后,保留率均超过90%,温度超过60℃时花青素加速降解,半衰期缩短,保留率降低;紫外光显著降低花青素保留率,避光条件下花青素保留率达到95%,紫外光照射1h后降低到32%。

Theextractionprocessofanthocyaninwasoptimizedbyultrasonic-assistedextractionwithdriedbutterflybeanflowerasrawmaterialandethanolasextractantatpH1.0andpH4.5.Theresultsshowedthattheoptimumparametersofultrasonic-assistedextractionmethodwereasfollows:solid-liquidratio1:30(g/mL),extractiontemperature50℃,ultrasonictreatmenttime20minandethanolvolumefraction60%,andthemaximumextractionamountcouldreach7.54(mg/g).ThestabilityofanthocyaninsisaffectedbypH,temperatureandlight,anditishighinstrongacidicenvironment(pH≤3).After1hofreaction,theretentionrateisover90%.Whenthetemperatureexceeds60℃,thedegradationofanthocyaninsisaccelerated,thehalf-lifeisshortenedandtheretentionrateisreduced.Ultravioletlightsignificantlyreducedtheretentionrateofanthocyanins,whichreached95%undertheconditionofavoidinglight,anddecreasedto32%after1hofultravioletlightirradiation.
