贵清庄园采购管理现状问题及对策
摘要
餐饮行业的发展过程中，供应链是重要的组成部分，在日常企业运营当中所发挥的作用是不可忽视的。在当下餐饮业竞争激烈，发展艰难的情况下，中小餐饮企业更是很难占据优势，获得发展。因为这类企业的规模小，在成本的控制上不够科学严格，加上市场本身变化多端，各项因素的变化都会影响到原材料的价格，进而对中小餐饮业的经营造成资金的周转问题，影响到企业的利润收入。所以，对于现代餐饮业来说，要充分了解食品采购策略及原则，科学有效地控制成本的支出。本位研究了“贵清庄园”，对其存在的采购管理问题进行调查分析，并运用所学专业知识，在采购策略制定、信息化建设以及管理供应商方面提出相应的方案。

ABSTRACT
Forthecateringindustry,procurementisanimportantlinkinthecateringindustrysupplychain,andtheroleplayedinthedailyoperationofenterprisesisverycritical.Especiallyunderthemoreandmoreviolentmarketcompetition,becauseofthesmallandmedium-sizedcateringindustryitsscalelimit,therecostcontroltechnologyisnotsoperfect,undertheinfluenceofcomplexexternaleconomicenvironment,Cateringenterprisesbecauseofthehighcostofrawmaterialsandaffectthenormaloperatingprofitsofmoreandmorecases.Therefore,graspingthepurchasingmanagementoffoodrawmaterialsandreasonablycontrollingtheoperatingprofitofenterprisesareapressingproblemthatshouldbesettledinthemanagementofmoderncateringenterprises.Therefore,thispaperchoosesGuiqingManorastheresearchobject,indentifiesproblemsintheprocurementprocess,andusestheprofessionalknowledgelearnedtomakereasonablepurchasingstrategy,speeduptheconstructionofprocurementsystem,reinforcethesuppliermanagement.
